Brazil was once among the world's largest cocoa producers, centred on the state of Bahia. In the 1990s a fungal disease known as witches' broom devastated its plantations and output collapsed.
What grew back was different. Alongside a recovered bulk industry, a fine-cocoa movement has taken hold in Bahia and the Amazon, where makers work with individual farms and with rare native cacao varieties once thought lost. Brazilian single-origin bars are some of the most varied you can try.
