If you grew up in Britain, you grew up on Ghanaian cocoa. Ghana is the world's second-largest producer, and its beans have been the backbone of British milk chocolate for over a century — Cadbury has bought from Ghanaian farmers since the early 1900s.
Most of the crop is Forastero, a hardy, productive variety that gives the full, round, unmistakably "chocolatey" flavour most of us think of as the taste of cocoa itself. That makes Ghana a useful baseline: taste a Ghanaian bar next to a Madagascan or Venezuelan one at the same percentage and the fruit, nut and floral notes of the fine-flavour origins suddenly become obvious.
