Indonesia is one of the world's larger cocoa producers, but most of that output is bulk cocoa from Sulawesi destined for mass-market chocolate. The fine chocolate interest lies elsewhere.
Java grows a pale-beaned cacao with Criollo ancestry that makes unusually light, caramel-toned chocolate — which is why Javan cocoa turns up so often in premium milk chocolate. Some Indonesian beans are dried over wood fires, which can leave a smoky note that some makers work to avoid and others celebrate.
